Before you can evaluate materials, it helps to understand what the options actually are. The mattress industry is built on four primary material types.
Innerspring and coil mattresses use a system of metal springs as the core support structure, typically layered with foam or fiber for comfort. They offer airflow and a bouncy, traditional feel, but they provide limited pressure relief and can transfer motion between sleep partners easily.
Conventional memory foam was developed in the 1960s by NASA and commercialized for consumer mattresses in the 1990s. It responds to body heat and weight to contour around pressure points, which made it a significant improvement over traditional coil mattresses for many sleepers. It is now the dominant foam type on the market.
Latex is a natural material derived from the sap of Hevea brasiliensis rubber trees. It has a more responsive, buoyant feel than memory foam and is naturally durable, breathable, and resistant to dust mites and mold. Latex comes in natural, synthetic, and blended forms, and those distinctions matter considerably.
Organic foam is a category that goes further still. What Conventional Memory Foam Is Actually Made Of
Memory foam is polyurethane foam, a petrochemical product. The base material is a synthetic polymer derived from petroleum, combined with additional chemical compounds that create its characteristic slow-response feel.
The concern for health-conscious shoppers is not theoretical. Conventional memory foam is known to off-gas volatile organic compounds (VOCs) in the period after manufacturing. VOCs are chemical vapors that release from synthetic materials at room temperature. Common VOCs found in polyurethane foam include formaldehyde, benzene, toluene, and acetone, among others. The "new mattress smell" that fades over days or weeks is the most obvious sign of off-gassing.
You spend roughly a third of your life on your mattress. If that surface is releasing chemical vapors throughout the night while you sleep, those vapors are entering your breathing environment in a confined space, for hours, in a deeply restful state when your body is most occupied with recovery.
Some manufacturers have introduced plant-based memory foam, which replaces a portion of the petroleum base with plant-derived oils. This is an improvement in terms of material origin, but it does not eliminate the polyurethane structure or the off-gassing concern. Latex Mattresses: Natural, Synthetic, and Blended
Latex is widely marketed as a natural and clean alternative to memory foam, and in its purest form, it is. But the word "latex" on a mattress label covers a range of very different products.
Natural latex is derived entirely from Hevea rubber tree sap. It is durable, responsive, breathable, and inherently resistant to mold and dust mites. It has no petroleum base. A high-quality natural latex mattress is a meaningfully better option from a material health standpoint than conventional memory foam.
Synthetic latex is made from petrochemicals, primarily styrene and butadiene, that are processed to mimic the feel of natural latex. It is less durable, less breathable, and carries many of the same chemical concerns as conventional foam. Some mattresses labeled as "latex" are made entirely from synthetic latex, which has more in common with memory foam than with natural rubber.
Blended latex mixes natural and synthetic latex in varying ratios, typically ranging from 30/70 to 60/40 natural to synthetic content. Blend ratios are not always disclosed clearly, which makes it difficult for shoppers to evaluate what they are actually buying.
GOLS certification (Global Organic Latex Standard) is the most meaningful indicator of latex quality. To earn GOLS certification, a latex product must be made from at least 95% certified organic raw material, and the full production process must meet organic processing standards. GOLS certification rules out synthetic blending and confirms the integrity of the latex source.

The limitation of standard latex, even high-quality GOLS-certified latex, is that it has a distinctly springy, responsive feel. That elasticity is part of what makes it healthy and durable. But it also means that latex does not offer the deep pressure-redistribution and slow-response contouring that memory foam delivers. For shoppers who want both the health credentials of organic latex and the feel of memory foam, standard latex has historically forced a compromise. What "Organic-Sounding" Actually Means and What It Doesn't

CertiPUR-US is a certification program for conventional polyurethane foam. CertiPUR-US certified foam is still polyurethane foam. It is still petrochemical-based. It still off-gasses, within the limits the program considers acceptable. A mattress labeled CertiPUR-US certified is not an organic mattress. It is a conventional synthetic foam that has passed a reduced-harm test.
Plant-based memory foam takes the positioning a step further by implying a natural origin. In practice, plant-based memory foam replaces a percentage of the petroleum inputs with plant-derived oils, typically soy or castor oil. The percentage varies by manufacturer and is rarely disclosed in full. The foam structure itself remains polyurethane. The off-gassing concern does not disappear — it is reduced proportionally to however much of the petroleum content was replaced. "Plant-based" describes where a portion of the raw materials came from. It does not describe an organic product, and it does not mean the foam is free of synthetic compounds.

Both CertiPUR-US and plant-based foam are improvements over standard conventional foam. Neither is organic foam. The distinction matters because labeling designed to suggest cleanliness without meeting organic certification standards is widespread in this industry.
